This meat production factory is located in an Osaka Buraku community and has been in operation for many years. In April, 2000, after the O-157 epidemic (food poisoning caused by bacteria), the factories were computerized with a stricter hygiene Control system. This photo shows the old facilities before automation. Though most processes have been computerized, some processes such as bleeding and skinning for the production of high quality meat still depend on human skill and experience.
